Baked Fish with Black Beans and Zucchini

Overview
Use a ceramic or glass baking dish with a glass cover if you already have one . If not, wrap the fish in aluminum foil or other wrap that can be used in the oven
Ingredients
4 skinless white fillets, 4 ounces. Use halibut, cod, haddock, or bluefish
4 tablespoon(s) extra virgin olive oil or coconut oil
1 teaspoon(s) zest of orange
2 cup(s) cloves garlic, minced
1 can (15 ounces) black beans, rinsed and drained
2 zucchinis, chopped
2 tablespoon(s) fresh squeezed orange juice
1/3 cup(s) fresh cilantro, minced
Steps
1. Adjust oven rack to lower-middle position and heat oven to 450ยบ.
2. In a small bowl, whisk together olive oil, orange zest, half of garlic. This will be used as a sauce in the next step.
3. Combine beans, zucchini, 2 tablespoons of the cilantro, orange juice, and remaining garlic. Spread bean mixture evenly on the bottom of a glass or ceramic baking dish. Place the filets on top, then spread the sauce on top of the fish.
4. Cover baking dish with a glass top. Cook until fish is just cooked through 15-20 minutes. Sprinkle with remaining cilantro. Enjoy!
