Blackberry Salad

Overview
Summer salads area refreshing and delicious when fruit is added. Add grilled chicken or salmon, or your favorite nuts or seeds for more protein. Phase One-Repair
Ingredients
1 tablespoon(s) organic coconut oil, melted
1 large red or golden beet
1 bunch of greens, washed
1 cup(s) fresh organic blackberries
1 avocado
1 teaspoon(s) organic apple cider vinegar
1 tablespoon(s) extra virgin olive oil
1 pinch(es) sea salt and pepper
Steps
1. Preheat oven to 350 degrees.
2. Peel and chop the beets into 1 inch chunks.
3. Line a baking sheet with parchment paper and place the beets. Sprinkle the coconut oil on them and toss to coat. Bake for 20 minutes and toss. Cook for another 15-25 minutes or until they are soft. Remove and cool when they are done.
4. Whisk the olive oil, apple cider vinegar, and salt and pepper in a bowl, or make your favorite dressing.
5. Add the lettuce, blackberries, avocado, and other favorite ingredients. Toss and serve. Enjoy!
