Overview
Make your own breakfast sausages in the beginning of the week and reheat them in the morning, for a quick, quality controlled breakfast meal. Pair with Sweet Potato Hash for a hearty and heart healthy meal. We added turmeric for its mild flavor and anti-inflammatory properties. Phase One-Repair
Ingredients
2 tablespoon(s) organic coconut oil
1 pound(s) free range or organic ground turkey or chicken
1 tablespoon(s) raw honey
3 tablespoon(s) fresh parsley, chopped and dried, or 2 tablespoon dried parsley
1 teaspoon(s) onion, granulated or powder
1 teaspoon(s) fennel seeds
1/2 teaspoon(s) dried sage
1/2 teaspoon(s) orange zest
1/4 teaspoon(s) unrefined sea salt
1/4 teaspoon(s) turmeric powder or fresh zest (optional)
1 dash(es) pepper
Steps
1. In a large cast iron or stainless steel skillet, melt 1/2 of the coconut oil on medium-low heat.
2. In a large bowl, mix the rest of the ingredients well and scoop into 12-14 balls and make into patties about 2-3 inches wide. Keep the patties as dry as possible.
3. Place them carefully in the heated skillet and cook 5-10 minutes on each side, depending on your altitude and temperature level. Make sure they are no longer pink in the center. I cook them in two batches, and clean and scrape the pan in between so the bits don't burn.
4. Serve and enjoy! Keeps in the refrigerator 5 days.
Variation: Remove Sage, orange zest, and fennel Add 1/3 cup dried apples diced, 1/2 tsp. cinnamon, 1/4 tsp. nutmeg
