Ingredients
2 cup(s) Brussels sprouts
2 tablespoon(s) coconut oil, divided
1 cup(s) cherries, organic
1/2 cup(s) pecans*, raw
Steps
1. Preheat the oven to 375 degrees. Wash the Brussels sprouts and cut off the ends. Cut in half or quartered, if they are large.
2. Wash the cherries and cut them in half and remove the pit. Or, if you are using frozen organic cherries, just cut them in half.
3. Grease the bottom of a large glass baking dish with coconut oil and add the cherries and Brussels sprouts. Toss mixture with another tablespoon of the oil.
4. Cook for 15 minutes and stir the mixture. Cook for another 5 to 15 minutes, depending on your oven temperature and altitude. They are ready when the Brussels sprouts are caramelized: just slightly brown and wilted.
5. Add the *pecans and mix it in. Serve and enjoy!
