Chicken and Kale Crock Pot Stew

Crock Pot soups are an easy way to make a nutritious and filling meal. Try either curly or dinosaur kale for this recipe.

Chicken and Kale Crock Pot Stew


  • 2 pound(s) boneless, skinless chicken thighs (free range, organic is best)

  • 1 sweet potato or yam, peeled and chopped into 1 inch pieces

  • 3 carrots, peeled and chopped into half moons

  • 1 yellow onion, chopped

  • 5 cup(s) organic chicken broth or vegetable broth( yeast free, no salt added)

  • 3 garlic cloves, minced

  • 2 teaspoon(s) fresh or dried thyme

  • 1 bunch kale, de-stemmed and chopped into pieces

  • 1 dash unrefined sea salt and pepper


1. In an insta pot, add all the ingredients, except for the kale.

2. Cook on soup setting for 30 minutes

3. When the timer dings, add the kale and let steam for a few minutes.

4. Serve and enjoy!

In a crock pot, add all the ingredients except the kale and set on high for 4 hours. 30 minutes before it's done, add the kale.
