Citrus Cauliflower Medley

Ingredients
1 teaspoon(s) blood orange vinegar or apple cider vinegar
1 head of cauliflower, washed
3 tablespoon(s) extra virgin olive oil, divided
4 clementines or similar small oranges/tangerines, peeled and segmented-about 1 cup
1/3 teaspoon(s) zest from the clementines
1 cup(s) kalamata olives, pitted
2 tablespoon(s) parsley, cleaned and minced
Steps
1. Preheat the oven to 450 degrees. Cut up the cauliflower into bite sized chunks, toss with about 1 tablespoon olive oil, and put them in a single layer in a glass baking dish. Bake 25 minutes, turning them halfway through cooking.
2. Make the dressing: blend/or whisk 2 tablespoon olive oil, the vinegar, zest and parsley.
3. When the cauliflower is done, arrange on a plate with the clementine pieces and olives. Pour on the dressing and serve. Enjoy!
