Coconut Lemon Drops

A sweet treat! This recipe was sent to me by a patient; I added the lemon zest and juice for a real pop of flavor. Lemons are high in Vitamin C, which is a powerful anti-oxidant, and the coconut meat and oil contain "good fats", better for blood sugar balance and cholesterol. It's nice to have sweet treat that's easy to make and you control the ingredients. Eat sparingly because they are addictive! Phase One-Repair

Coconut Lemon Drops


  • 1 1/2 cup(s) shredded unsweetened coconut

  • 1/4 cup(s) raw honey

  • 2 tablespoon(s) organic coconut oil

  • 1/2 teaspoon(s) pure vanilla extract

  • 1/8 teaspoon(s) unrefined sea salt

  • 1 lemon, zested (about 1 tsp)

  • 1/4 teaspoon(s) lemon juice


1. Put all the ingredients in a food processor and blend.

2. Scoop out with a tablespoon and roll in palms into balls. Place on a parchment lined plate or cookie tray

3. Refrigerate for 1 hour. Enjoy!

4. Keep in the refrigerator or freezer.

*Substitute raw cacao or unsweetened organic cocoa powder for the lemon and lemon zest for a taste of chocolatey goodness.
