Summer soup is refreshing and super easy to make. Use fresh mint and basil from your own backyard. Phase One-Repair

Cold Cucumber and Pineapple Soup

Ingredients

  • 3 cucumbers

  • 1 pineapple

  • 6 fresh mint leaves

  • 6 fresh basil leaves

Steps

1. Use fresh pineapple, if you can. Cut the top and bottom off the pineapple. Cut the rind off all sides. Slice in half the long ways then slice into quarters. Cut the triangular end off the middle part and discard. Cut the rest of the pineapple into chunks. Substitute frozen pineapple, if you don't have fresh.

2. Peal the cucumber, cut in half the long ways. Scoop out the seeds with a spoon.

3. Mix all ingredients, including basil and mint, in a food processor or blender.

4. Blend and serve. Enjoy!
