Overview
What do you do when you buy a lot of herbs and don't need them all? Or it's the end of growing season, and you don't want your herbs to die. Make your own dried herbs easy in a high-speed blender.

Phase One-Repair
Ingredients
1 bunch fresh herbs (parsley, cilantro, basil, oregano, sage, etc.)
Steps
1. Clean your herbs and discard unusable pieces. Put the remaining herbs in a high-speed blender, like a Vitamix.
2. Add enough water so the herbs float. Turn the blender on high for 20 seconds.
3. Using a medium fine mesh strainer (the same size for washing quinoa), strain and discard the water. Press as much water out of the herbs as you can.
4. Spread the herbs onto a paper towel, roll it up and squeeze the excess water out. Lay another paper towel down and spread the herbs out. Dry for 24-48 hours, until all the moisture gone. Store in an airtight container in a cool, dry place.
5. Use in soups, salads, dressings, sauces, and dips. Enjoy!
