Fish Fillet with Julienne Vegetables

Overview
Use any white fish fillet you like: Sea Bass, Tilapia, Cod, Halibut, whatever is in season and fresh and tasty. Using a ceramic dish with a glass top is a less toxic choice over using aluminum foil packets. Phase One-Repair
Ingredients
1 small zucchini, cut into 1/4 x 1-inch julienne strips
1 small yellow squash, cut into 1/4 x 1-inch julienne strips
1 carrot, cut into 1/4 x 1-inch julienne strips
1 tablespoon(s) zested or grated fresh ginger
1/2 fresh squeezed lemon, juiced
cloves garlic, minced
4 fish fillet, fresh sea bass is best. If you can't find, try another favorite white fish
Steps
1. Pre-heat the oven to 350 degrees. In a glass or ceramic baking dish, mix zucchini, yellow squash, carrots, and ginger together.
2. Lay the filets on top, sprinkle with lemon and chopped garlic.
3. Cover and bake for 15-20 minutes, depending how thick your fillets are. They should be white on the inside and mildly flakey. Don't overcook. Enjoy!
