Garlic and Honey Mustard Dressing

Ingredients

  • 2 heads of garlic

  • 2 tablespoon(s) Dijon mustard

  • 1 1/2 tablespoon(s) natural or raw honey

  • 3 tablespoon(s) organic apple cider vinegar

  • 1/4 cup(s) unsweetened organic, or fresh squeezed apple juice

  • 1 dash(es) sea salt and pepper to taste

Steps

1. Roast the garlic ahead of time. Preheat oven to 375 degrees. Remove the out paper of the garlic without breaking it apart. Cut 1/2 inch off the head and place face down in a small, glass baking dish. Add 1 tablespoon of water to the dish and cover with aluminum (or use a glass lid).

2. Bake for 45-60 minutes, until the cloves are soft. Let cool.

3. Squeeze the garlic head paste into a small blender. Add the rest of the ingredients and blend until creamy.

4. Serve as a salad dressing, vegetable dip, or a sauce for fish. Keeps refrigerated in a tightly closed jar for 4 days. Enjoy!
