Goji Berry and Cacao Snack Bars

Overview
A much healthier alternate to the high sugar energy bars currently on the market.
Goji berries are known to be a very dense nutritional food boasting loads of antioxidants and immune boosting properties. They are researched and have many uses, including free-radical fighters and as remedies for inflammatory diseases: cancer, diabetes, high cholesterol, and heart disease. High in protein, beta carotenoids, Vitamins A, B complex, C, E, iron, amino acids (protein building blocks), essential fatty acids, selenium, and many trace minerals. They are truly a "superfood".
Raw cacao nibs are hard to find, use the unsweetened cacao if you can't find raw.
Ingredients
1/4 cup(s) shredded unsweetened coconut
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) cinnamon
12 large soft pitted dates (like Medjool), about one cup
1 cup(s) raw almonds
1/4 teaspoon(s) sea salt
3 tablespoon(s) Goji berries
2 tablespoon(s) Cacao nibs (raw)
Steps
1. Make the date paste first either by mashing dates by hand, or in a food processor. Add tiny amounts of water if needed to make it pasty.
2. In a food processor or nutribullet, grind the almonds to a powder.
3. In a large bowl, mix date paste, almond powder, goji berries, cacao nibs, salt, coconut, vanilla, and cinnamon.
4. Line a square pan with parchment paper, press mixture evenly to the edges. Cut into squares and serve.
5. Keep in airtight container for up to a week. No need to refrigerate so it makes a handy travel/hiking/biking snack. Enjoy!
