Golden Beet and Apple Mash

Overview
We used golden beets over the red kind here; they both still contain antioxidants and no red stains! This is another dish we used as a side alternative to mashed potatoes. Phase One-Repair
Ingredients
2 cup(s) filtered water, or low sodium, yeast free vegetable stock
2 tablespoon(s) coconut oil
5 bunches of golden (or red) beets, peeled and chopped into inch small chunks
2 granny smith apples, peeled, cored, and chopped into small chunks
Steps
1. In a Dutch oven or large pot, heat the coconut oil over medium heat. Add the apples and beets. Cover and cook for 15-20 minutes, until soft. Stir often so they won't burn.
2. Add 2 cups of water, or vegetable stock (we used water). Cover and cook for 20-30 minutes until everything is completely tender and the liquid is mostly evaporated. (Higher altitudes require longer cooking time)
3. Mash with a potato masher, or with a hand/emersion blender. It will taste great, even if chunky. Serve warm. Enjoy!
