Hearty Banana Orange Pancakes

These pancakes are amazing. They are totally gluten, dairy, and sugar free, and vegan. Pancake mixes can't compare.

Hearty Banana Orange Pancakes


  • 1 banana, ripened

  • 1 cup(s) unsweetened almond milk

  • 6 tablespoon(s) flax meal

  • 3 tablespoon(s) coconut oil, divided

  • 1 teaspoon(s) orange zest

  • 1 cup(s) gluten free oat flour

  • 1 cup(s) unsweetened shredded coconut

  • 1/2 cup(s) fresh squeezed orange juice, about 2 oranges

  • 1 teaspoon(s) baking powder, organic

  • 1 teaspoon(s) cinnamon

  • 1 tablespoon(s) honey, raw if you have it

  • 1 orange, peeled and cut into pieces


1. In a large bowl, mash the banana and mix in the almond milk, flax meal, 1 1/4 tablespoon of the coconut oil, and the orange zest. Let sit for 15 minutes.

2. Mix in oat flour, shredded coconut, orange juice, baking powder, and cinnamon.

3. In a large stainless steel or cast iron skillet, heat the rest of the coconut oil over medium heat. Scoop 1/4 cup of the batter and drop into oil. Flatten the pancake out with a spatula, if needed. Heat of both sides until golden brown, about 6 minutes per side.

4. Drizzle with honey and orange slices, or fresh fruit, and serve warm. Enjoy!
