Overview
Apples are a great source of soluble fiber. We leave the skins on for added fiber and nutrients Choose a variety of sweet (fuji) and tart (granny smith) apples for a rich taste. Phase One-Repair
Ingredients
4 apples, cored
1 1/2 tablespoon(s) lemon juice, fresh squeezed
1/2 teaspoon(s) cinnamon
5 grapes, seeded (*optional)
Steps
1. Quick and easy method (if you have a high-speed blender, like a Vitamix ): Wash and core the apples. Chop into chunks a place in the blender.
2. Add the lemon juice and cinnamon. Use 5 grapes, if the apples are too tart.
3. Blend for 40 seconds. Pour into cups. You can freeze leftovers or double the recipe and freeze half the amount in a glass container. Thaw in the refrigerator when needed.
4. Stove Top: Peel (but leave 50 of the peel on) and core the apples. Chop into chunks. Cook on the stove on low heat until the apples are cooked through, about 10 minutes (may be longer), stirring constantly. Mash with a potato masher, add lemon and cinnamon to taste. Enjoy!
