Honey Roasted Vegetables

Use any combination of vegetables for an easy side dish that is warming, sweet, and never boring. Phase One-Repair

Honey Roasted Vegetables


  • 2 carrots

  • 2 parsnips

  • 2 sweet potatoes

  • 2 golden or red beets

  • 2 turnips

  • 1 tablespoon(s) extra virgin olive oil or coconut oil

  • 1 tablespoon(s) honey


1. Preheat oven to 425°.

2. Peel and chop equal amounts of vegetables (use any or all of these choices) into bite sized chunks. Place veggies in a glass baking dish. Top with olive oil or coconut oil and honey. Mix to cover all veggies.

3. Cook uncovered for 40 minutes, stirring every 15 minutes. Serve. Enjoy!
