Macadamia Nut Bars

Overview
Healthy snacks that you can carry in your purse or in the car; will help your blood sugar from dropping in between meals.
Ingredients
8 Medjool dates
3/4 cup(s) macadamia nuts
3/4 cup(s) organic shredded coconut
1/2 cup(s) dried blueberries, unsweetened (or raisins)
1/2 cup(s) dried cherries, unsweetened
3/4 cup(s) sunflower seeds, raw (or pumpkin seeds)
1/4 teaspoon(s) cinnamon
1/2 teaspoon(s) organic vanilla extract
1 teaspoon(s) raw honey
Steps
1. Soften the dates and remove the pits: Boil water in a saucepan, add the dates for 1 minute. Remove from the water and it should be easy to take the pits out.
2. Mix all ingredients in a food processor for several minutes until everything is mixed well.
3. Press into plastic sheet in a square baking dish until you get it all into a neat sheet that is about 1 inch thick. I use a glass baking dish; the mixture fills about 1/2 the dish.
4. Put into the refrigerator for at least 3 hours, until it sets.
5. Cut into bars and enjoy them or wrap them up and take with you on the go. Can stay in the refrigerator for up to a week. Enjoy!
