Overview

Frozen fruit pairs well with coconut milk to give you a creamy dessert when you are craving something sweet. Even though this dessert is all natural with ingredients as raw honey and fresh fruit and juice, try to have it soon after a high protein and fat dinner so you blood sugar doesn't spike. Try liquid stevia to replace the honey if you have any dysglycemia.

Mango Pops

Ingredients

  • 3 cup(s) mangoes, organic frozen and slightly thawed (about 2 bags)

  • 1/4 cup(s) can coconut milk

  • 1 tablespoon(s) fresh orange juice (more to help emulsify while blending)

  • 1 tablespoon(s) natural or raw honey

  • 1 teaspoon(s) organic vanilla extract

Steps

1. Blend the frozen mango, coconut milk, orange juice, honey, and vanilla until smooth. Add orange juice to liquify if necessary, but not more than the consistency of ice cream. Fill ice-pop molds or scoop into a few cups and freeze.
