Looking for a hearty breakfast to pair with your morning smoothie? Try this dairy-free breakfast bake, made with quinoa (a protein dense grain), berries, fruit, and nuts.
Our favorite combinations: Blueberry, peach; red raspberry, red apple, almond, coconut flakes; or cherry, black berry, green apple, almond, and cashew.
Experiment with dried apricots, sunflower seeds, cashews, almonds, pecans, pistachio nuts, and any berry combination you like.
Ingredients
1 cup(s) uncooked quinoa, rinsed
2 teaspoon(s) cinnamon
1 1/2 cup(s) berries (see above for suggested combinations, or experiment with your favorites)
3/4 cup(s) nuts (your choice) chopped
1 apple or pear, cored and chopped
1 banana
2 cup(s) almond or coconut milk
1 handful(s) unsweetened coconut flakes
1/2 teaspoon(s) organic vanilla extract (optional)
Steps
1. Preheat oven to 350 degrees.
2. In a fine mesh strainer, rinse the quinoa well. Mix the quinoa and cinnamon in a bowl. In a 9x12 (or similar size) glass baking dish, grease the bottom with the coconut oil. Spread the quinoa mixture evenly on the bottom.
3. Add the fruit and nuts on top.
4. In a separate bowl, mash the banana, the coconut or almond milk, and the vanilla together. Pour mixture onto the fruit and nuts, spread easily. Sprinkle with the coconut flakes.
5. Bake for 1 hour.
6. Scoop out and enjoy plain or topped with unsweetened coconut yogurt. Enjoy!
