Overview

Salmon filet or steaks are delicious with the mango salsa. Salmon is a major source of Omega 3 fats.

Salmon with Avocado and Mango Salsa

Ingredients

  • 2 3-4 ounces wild caught salmon filets

  • 2 teaspoon(s) coconut oil

  • 2 tablespoon(s) fresh squeezed lemon juice

  • 1/4 red onion, minced

  • 2 cloves garlic, minced

  • 1 ripe mango, cut into 1/4 cubes

  • 1 ripe avocado, cut into 1/4 cubes

  • 1 tablespoon(s) fresh squeezed lime juice

  • 1 tablespoon(s) fresh cilantro, minced

Steps

1. Preheat oven at 325 degrees F. Grease a medium sized ceramic or glass pan with coconut oil. Brush salmon with lemon juice and place in pan or dish. Bake uncovered for 15-20 minutes or until moist and flaky.

2. For salsa: in medium bowl mix the mango, avocado, onion, cilantro, lime juice and garlic.

3. Serve salsa on top of the baked fish. Enjoy!
