Overview
Dried split peas kept in glass jars will keep in your cupboard for a while.
Ingredients
1 teaspoon(s) sea salt and pepper to taste
3 cup(s) dried split peas, rinsed
6 carrots, peeled and chopped
1 yellow onion, chopped
2 cloves garlic, minced
1 teaspoon(s) thyme, dried or 1 tablespoon fresh
4 cup(s) water
4 cup(s) low sodium vegetable broth
dash sea salt and pepper to taste
Steps
1. In a large pot, add all ingredients and vegetable stock. Bring to a boil over high heat. Reduce heat, partially cover, and simmer for about 60 minutes. Stir occasionally. The consistency should be smooth, mix with immersion blender if you want to make it creamier. Serve in large soup bowls. Enjoy!
Alternative: Crockpot Cooking
2. Put all the ingredients into a crock pot and cook on low for 8 hours. Mix with an immersion blender if you desire a creamier consistency. Enjoy!
