Stuffed Yams

Extra-large yams or sweet potato makes this vegetarian dish an delicious meal, or pair it with Easiest Chicken Breast or Quinoa with Black Beans for a heartier meal. Phase One-Repair

Stuffed Yams


  • 2 extra-large yams or sweet potatoes

  • 1 tablespoon(s) coconut oil

  • 1/4 any color onion, chopped

  • 2 garlic cloves, minced

  • 1/2 bunch greens: dinosaur kale, swiss chard, etc. Cleaned and de-stemmed

  • 1/2 avocado sliced

  • 1 teaspoon(s) fresh lemon juice


1. Preheat oven to 400 degrees. Prick 2 extra-large yams with a fork and bake on a baking sheet for 45-60 minutes. Potatoes are done when a knife can poke through easily.

2. In a large skillet on medium heat, sauté onion for 6 minutes, add garlic and cook for another 2 minutes. Add greens and cook until wilted, about 5 minutes.

3. When potatoes are done, cut in half lengthwise and add the sauteed mixture. Cook for another 15 minutes.

4. Top with lemon juice, and avocado and serve. Recipe can be doubled for more servings. Enjoy!
