Twice Baked Sweet Potatoes

Potatoes (or yams) take a little longer to cook in the skin, but this dish is definitely worth it if you have the time. Phase One-Repair

Twice Baked Sweet Potatoes


  • 2 sweet potatoes, or yams

  • 1 teaspoon(s) extra virgin olive oil

  • teaspoon(s) cinnamon

  • 2 tablespoon(s) organic olive oil

  • 1 pinch(es) nutmeg


1. Preheat the oven to 400 degrees. Rinse the potatoes and cut in half lengthwise.

2. Line a baking sheet with parchment paper. Drizzle the potatoes with olive oil and bake face down for 45-60 minutes, until soft.

3. Remove from the oven and carefully scoop out the flesh, preserving the skins.

4. Place the potato flesh into a bowl and add the nutmeg, cinnamon, and coconut oil. Mix well and scoop the mixture back into the skins. Bake again for 15 minutes (face up). Enjoy!
