Veggie Salad with Chicken

Use whatever veggies you have for this delicious anytime salad. Phase One-Repair

Veggie Salad with Chicken


  • 1 bunch green, red, romaine, or butter lettuces

  • 1/2 cup(s) red cabbage, shredded

  • 1/4 cup(s) jicama, julienned

  • 1/4 cup(s) carrots, julienned

  • 1 scallion, white part chopped

  • 2 radishes, thinly sliced

  • 1 stalk celery, thinly sliced

  • 2 breast chicken

  • 1 tablespoon(s) coconut oil

  • 1/4 cup(s) salad dressing

  • 1/4 cup(s) almond or cashew pieces (Skip this for phase one)


1. Heat coconut oil in a pan and sauté chicken over medium heat, covered. Cook thoroughly and remove, about 10 minutes per side.

2. In a large bowl, combine all vegetables.

3. Slice chicken into thin strips and add to vegetables. Top with almonds or cashews (Phase Two only).

4. Make Simple Balsamic Vinaigrette, or Citrus Vinaigrette, or your favorite dressing. Toss with salad. Enjoy!
