Use leftover cooked Jasmine or Basmati Rice or make it fresh that day.

Very Berry Rice Pudding


  • 1 tablespoon(s) grade A or B pure maple syrup

  • 2 cup(s) leftover rice, brown rice preferred

  • 1/2 cup(s) unsweetened almond milk

  • 1/2 teaspoon(s) pure vanilla extract

  • 1 teaspoon(s) cinnamon

  • 1/2 cup(s) mixture of unsweetened or juice sweetened dried fruit and nuts


1. Add any combination: Unsweetened cranberries, blueberries, cherries, sunflower seeds, nuts, fruit, coconut, etc. to taste.

2. Combine all ingredients in a pot. Simmer and stir at least 15 minutes. The more you stir and the longer you cook it, the softer it will get. Serve hot or cold. Enjoy!
