Wraps: Shepherd's Pie

Ingredients

  • 1-pound(s) ground turkey

  • 1 sweet potato or yam (about 1 lb.), peeled and cut into 1/2-inch cubes

  • 1/2 head of broccoli, cleaned and chopped up into smaller pieces

  • sea salt and pepper to taste

  • 1 head of romaine lettuce

Steps

1. In a large stainless-steel pan, brown the meat over medium-low heat, covered. Check every few minutes and break apart with a potato masher. Cook for about 15 minutes, until all the meat is brown (not pink).

2. In a soup or stock pot, fill halfway with water, add sweet potatoes, and boil. After 10 minutes, add the broccoli. Cook for another 10 minutes.

3. Drain the veggies in a colander and add them back to the soup pot along with the meat. Mix with a potato masher until all the ingredients are combined. Add salt and pepper to taste.

4. Clean off the outer leaves of the lettuce and discard any damaged ones. Rinse off the leaves under cooler water. Gently, pat dry on a paper towel or clean dish towel. Place meat and veggie mash onto a leaf. Fold in half and eat (may be messy). Enjoy!
