Cauliflower "Fried Rice"

Overview
Cauliflower makes a great base for this healthy version of fried rice. Shred the vegetables in a food processor, or chop into small pieces. Look for coconut aminos in the ethnic food section at your local health food store. They are a wheat free, soy free, variation of soy or tamari sauce.
Ingredients
1 head of cauliflower
1 teaspoon(s) coconut oil
2 teaspoon(s) toasted sesame oil
1 zucchini, diced or shredded in a food processor
1 garlic clove, diced
2 teaspoon(s) fresh ginger, peeled and zested
3 scallions, minced
1/2 bunch lacinato or dinosaur kale, de-stemmed and shredded.
1 tablespoon(s) coconut aminos
Steps
1. Shred head of cauliflower in a food processor.
2. In a medium saucepan or pan, melt the oils. Add the zucchini and cook for 2 minutes.
3. Add the rest of the vegetables and cook for another 3-5 minutes.
4. Take off the heat and add the aminos, stir well. Enjoy!
