Overview
With a dollop of unsweetened coconut yogurt and fresh fruit these bars make a great quick breakfast, dessert, or snack.
Ingredients
1 teaspoon(s) organic coconut oil
3 cup(s) gluten free rolled oats
1/2 cup(s) dried cherries (unsweetened)
1/2 cup(s) medjool dates, pitted
2 teaspoon(s) cinnamon
1 teaspoon(s) unrefined sea salt
1/2 cup(s) almond butter, room temperature
4 tablespoon(s) ground flax meal
1/2 cup(s) apple sauce, unsweetened
1/3 cup(s) raw honey
3 tablespoon(s) organic orange juice
1 teaspoon(s) organic vanilla extract
Steps
1. Preheat oven to 350 degrees.
2. Brush melted coconut oil on a 9x12 glass baking dish.
3. Put parchment paper on top of the oil and press down.
4. Mix the oats, cherries, dates, cinnamon, and sea salt in a medium sized bowl.
5. In a large bowl, combine almond butter, ground flax, applesauce, honey, orange juice, and vanilla extract.
6. Add the oats to the larger bowl and combine well.
7. Add the mixture to the baking dish and spread out evenly, to the corners and press down.
8. Cook for 30 minutes on a center rack. Take out and cool.
9. Cut into bars and serve. Keep airtight in the refrigerator for up to a week. Enjoy!
