Overview

Wraps are an alternative to sandwiches. We found the Mahi Mahi to be a great choice for the combination of ingredients. Phase One-Repair

Wraps: Mahi Mahi

Ingredients

  • 6 ounce(s) fresh or frozen Mahi Mahi (add 6 ounces of fish per person)

  • 1 tablespoon(s) coconut or extra virgin olive oil

  • 1 teaspoon(s) lemon juice

  • 1 carrot(s), peeled and shredded

  • 1/4 red or golden beet, peeled and shredded (uncooked)

  • 1/2 avocado slice, or try the Creamy Avocado Cilantro Dressing (link in directions)

  • 1/2 head of either romaine lettuce, red, or green cabbage

Steps

1. Preheat oven for 425 degrees. Rinse Mahi Mahi and pat dry with a paper towel. Place in a glass or ceramic baking dish and drizzle oil and lemon on top. Bake uncovered for 15 minutes, or until flaky.

2. Cut the Mahi Mahi into 1/2-inch chunks and set aside.

3. Peel the beets and carrots. Use your fine shredding setting on your food processor or mandolin and separately shred both vegetables.

4. Use an avocado slice, or make this tasty and versatile Creamy Avocado and Cilantro sauce/dressing.

5. Lettuce/Cabbage Wraps-Use red cabbage, green cabbage, or romaine lettuce leaves for an alternative to a lettuce wrap or sandwich. Clean off the outer leaves and discard any damaged ones. Rinse off the leaves under cooler water. Gently, pat dry on a paper towel or clean dish towel. Place fish, veggies, and sauce onto a leaf. Fold in half and eat (may be messy). Enjoy!
