Overview
Juicy and tasty chicken dish for the whole family! Try sauteed greens as a side dish for this healthy meal.
Ingredients
2 organic chicken breasts
1 whole bunch basil leaves, washed and de-stemmed
2 cloves garlic
1/4 cup(s) pine nuts or walnuts
2 tablespoon(s) fresh squeezed lemon juice
1 teaspoon(s) lemon zest
2 tablespoon(s) extra virgin olive oil
Steps
1. Preheat oven to 425 degrees.
2. If using walnuts instead of pine nuts: Toast in a heavy skillet for 5 minutes.
3. In food processor or blender, blend basil, garlic, toasted walnuts, or pine nuts, lemon juice and lemon zest. Slowly pour in olive oil and mix until smooth.
4. Place chicken in a glass or ceramic baking dish and coat chicken with pesto mixture. Bake chicken until cooked through, 30 minutes. Serve and enjoy!
