Ingredients
1 cup(s) low sodium vegetable or chicken broth
2 organic chicken breasts
1 tablespoon(s) extra virgin olive oil or coconut oil
1/2 tablespoon(s) lemon pepper
3 tablespoon(s) red onion, diced
1/3 cup(s) organic orange juice
2 teaspoon(s) honey
Steps
1. Heat the oil in a large stainless steel skillet over medium heat. Season both sides of chicken breasts with lemon pepper. Place the chicken and onions in the pan and saute together for about 4 minutes. Flip the chicken and cook another 4 minutes. The chicken will be undercooked, but seared on both sides, and the onion should be soft.
2. Add low-sodium chicken broth and increase heat to medium-high. Gently boil until sauce is reduced by half and looks syrupy, 8-10 minutes. Flip the chicken again.
3. Add orange juice and honey and simmer for 2 minutes.
4. Remove chicken and sauce from the pan and serve with a baked sweet potato and greens. Enjoy!
